For 20 years, we
have been growing green and red chili, on alkaline clay loam soil,
using organic growing practices, from seed to freezer, on our
seven-acre farm in Sabinal, New Mexico. Our growing practices
are certified by the New Mexico Department of Agriculture (NMDA) and follow
the USDA Organic standards. No GMO products or pesticides are used.
Our selected red and green chili pods are harvested at their peak of
maturity when the highest level of vitamin A and C is reached. Our
seed is selected from the best solar dried red chili pods harvested
and saved each year since 1981 when we started farming. Our chili
variety is a cross between “Big Jim” and “Sandia Hot” yielding a
large pod with medium to hot pungency. We call this variety “Sabinal
Special”.
Our processing operation is also certified organic
by the New Mexico Department of Agriculture (NMDA). We roast our chili in a
convection oven, then peel, dice, and freeze it in half pound and
one-pound packages. There’s no water or preservatives added. We also
produce a high quality dry red chili pod, which we make into red
chili sauce, and package in a flip-top PET plastic squeeze bottle.
The pungent “ready to eat” semi sweet taste of our green chili and
red chili sauce is perfect for enchiladas, tamales, tacos,
stir-fries, soups, stews, as a dip or added to your favorite dish. |

Starting mid-August until first freeze, usually mid-October, we will have fresh green
chili. In the winter and spring, we have our processed chili (roasted, peeled, diced, lightly salted and frozen) for your
“ready to eat” convenience. Our frozen chili product will be sold on
a “first come first serve” basis at the Farmers Market in Socorro
and select Farmers Markets in Albuquerque, from our freezer to
yours. We will also have product available for sale through this
website in limited supply. Please
